minutesSoft and fragrant Swahili Mombasa Mahamri – lightly sweet, cardamom-flavoured fried bread, perfect for breakfast, tea, or festive occasions.
Ingredients
* 3 cups all-purpose flour
* ¼ cup sugar
* 1 tsp cardamom powder
* 1 tbsp instant yeast
* 1 tbsp ghee
* ½ cup coconut cream
* ¼ cup sour yogurt
* ¾ cup milk
* Oil for frying
Directions
- In a small bowl, combine instant yeast with ½ cup of coconut milk, set aside.
- In a large mixing bowl, mix flour, sugar, and cardamom powder.
- Add ghee, coconut cream, sour yogurt, and the yeast mixture.
- Gradually add milk, knead until dough is soft, smooth, and elastic.
- Divide into 4 balls, let rise for 1-2 hours.
- Roll each ball into ½ cm thick circles, cut into triangles.
- Heat oil on low flame, gently fry triangles until puffed and golden.
- Transfer to paper towels to drain excess oil.
