Soft and fragrant Swahili Mombasa Mahamri – lightly sweet, cardamom-flavoured fried bread, perfect for breakfast, tea, or festive occasions.

Ingredients

  • * 3 cups all-purpose flour

  • * ¼ cup sugar

  • * 1 tsp cardamom powder

  • * 1 tbsp instant yeast

  • * 1 tbsp ghee

  • * ½ cup coconut cream

  • * ¼ cup sour yogurt

  • * ¾ cup milk

  • * Oil for frying

Directions

  • In a small bowl, combine instant yeast with ½ cup of coconut milk, set aside.
  • In a large mixing bowl, mix flour, sugar, and cardamom powder.
  • Add ghee, coconut cream, sour yogurt, and the yeast mixture.
  • Gradually add milk, knead until dough is soft, smooth, and elastic.
  • Divide into 4 balls, let rise for 1-2 hours.
  • Roll each ball into ½ cm thick circles, cut into triangles.
  • Heat oil on low flame, gently fry triangles until puffed and golden.
  • Transfer to paper towels to drain excess oil.
