Ingredients
* 2 cups all-purpose flour
* 1/2 teaspoon salt
* 1 cup unsalted butter, cold
* 1/2 cup ice-cold water
Directions
- Prepare the Butter:
- Grate the frozen unsalted butter into small cubes and place it in the freezer for about 10 minutes to ensure it’s very cold.
- Mix the Dry Ingredients:
- In a mixing bowl, combine the all-purpose flour and salt.
- Incorporate the Butter:
- Using a pastry cutter or your fingers, quickly work the cold butter cubes into the flour mixture until you have a coarse, crumbly texture.
- Add Cold Water:
- Gradually add ice-cold water to the mixture while stirring with a fork. Continue adding water until the dough comes together. Be careful not to overwork it; you want visible butter pieces in the dough.
- Form the Dough:
- Turn the dough out onto a floured surface and shape it into a rectangle. Roll it out into a long, narrow strip.
- Fold the Dough:
- Fold the top third of the strip down to the center, then fold the bottom third up, like a letter. This is one “fold.” Chill the dough in the refrigerator for about 20 minutes.
- Repeat the Folding:
- Remove the dough from the refrigerator, roll it out again into a long strip, and perform another fold. Repeat this process for a total of four folds, chilling the dough for 20 minutes between each fold.
- Final Chill:
