Flaky and buttery homemade puff pastry dough – quick, no-fuss recipe perfect for tarts, pies, pastries, and savoury or sweet bakes.

Ingredients

  • * 2 cups all-purpose flour

  • * 1/2 teaspoon salt

  • * 1 cup unsalted butter, cold

  • * 1/2 cup ice-cold water

Directions

  • Prepare the Butter:
  • Grate the frozen unsalted butter into small cubes and place it in the freezer for about 10 minutes to ensure it’s very cold.
  • Mix the Dry Ingredients:
  • In a mixing bowl, combine the all-purpose flour and salt.
  • Incorporate the Butter:
  • Using a pastry cutter or your fingers, quickly work the cold butter cubes into the flour mixture until you have a coarse, crumbly texture.
  • Add Cold Water:
  • Gradually add ice-cold water to the mixture while stirring with a fork. Continue adding water until the dough comes together. Be careful not to overwork it; you want visible butter pieces in the dough.
  • Form the Dough:
  • Turn the dough out onto a floured surface and shape it into a rectangle. Roll it out into a long, narrow strip.
  • Fold the Dough:
  • Fold the top third of the strip down to the center, then fold the bottom third up, like a letter. This is one “fold.” Chill the dough in the refrigerator for about 20 minutes.
  • Repeat the Folding:
  • Remove the dough from the refrigerator, roll it out again into a long strip, and perform another fold. Repeat this process for a total of four folds, chilling the dough for 20 minutes between each fold.
  • Final Chill:
  • After the fourth fold, wrap the dough in plastic wrap and chill it in the refrigerator for at least 30 minutes before using it in your Steak Puff Pastry recipe.
