Ingredients
- For Chicken Marination:
* 1/2 kg Boneless Chicken
* 1 tbsp paprika powder
* 1/4 tsp turmeric
* Salt to taste
* 1 tsp red chili powder (or paste)
* 1/2 tbsp ginger garlic paste
- For the Gravy:
* 500 g tomatoes, roughly slit
* 100 gms roughly cut onions
* 1 tbsp garlic paste
* 50 gms cashews
* 1 tsp kasoori methi
* 1/2 tsp garam masala
* 4 tbsp sugar
* 2 tbsp Kashmiri chili powder
* 5 tbsp butter
* 3 tbsp cream
* 2 tablespoons malt vinegar or 1.5 tablespoons white vinegar
* Salt to taste
* Whole Spices (Cinnamon, Black Pepper, cloves, coriander seeds, cumin seeds)
* Paprika Powder
Directions
- Marinating the Chicken:
- Begin by marinating the boneless chicken with ginger paste, garlic paste, red chili powder, turmeric, and a pinch of salt.
- Allow the chicken to luxuriate in these rich flavors for a minimum of 15-20 minutes.
- Infusing Smokiness:
- To unlock the perfect Butter Chicken taste, follow my mother’s age-old secret. Place a hot coal on top of the marinated chicken nestled on foil paper.
- Drizzle a bit of ghee or oil over the coal, then quickly cover the chicken until the mesmerizing smoke subsides. For an added layer of flavor, you can apply the same smoky technique to the gravy.
- Pan-Frying the Chicken:
- Heat a splash of oil in a pan and gently fry the smoky, marinated chicken pieces until they glisten with a golden hue.
- Once cooked to perfection, transfer the chicken to a bowl and set it aside.
- Creating the Flavorful Base:
- In the same pan, add a generous dollop of butter and let it melt into a golden pool of flavor.
- Introduce the sliced onions and sauté until they turn translucent, releasing their enticing aroma.
- As the onions become your aromatic canvas, add the tomatoes and cashew nuts and whole spices to join this flavorful masterpiece.
- Simmering the Gravy:
- Pour in a touch of water, garlic paste, salt, malt vinegar, sugar, garam masala powder, and Kashmiri chili powder.
- Give it a hearty stir and let the flavors harmonize as the mixture simmers for 15-20 minutes.
- Blending to Perfection:
- Once the symphony of flavors has matured, blend the simmered mixture into a velvety smooth puree that’s brimming with rich hues and tantalizing aromas.
- Straining for Excellence:
- To reach the pinnacle of buttery elegance, don’t forget to strain the puree back into the pan. This meticulous step guarantees a luscious and refined texture to your gravy.
- Adding the Finishing Touches:
- Infuse your creation with a generous helping of butter, a seductive swirl of cream, the smoky marinated chicken, and the enchanting essence of kasoori methi.
- Let these exquisite ingredients entwine as they simmer for an additional 5-7 minutes.
- Garnishing and Savoring:
- Voilà! The masterpiece is complete!
- Garnish your Dhaba Style Butter Chicken with a luxuriously indulgent dollop of cream and a sprinkle of crushed kasoori methi.
- Your taste buds are in for a symphony of flavors as you savor every delectable bite of this culinary masterpiece.
