Enjoy Dar es Salaam’s famous Sururu skewers – tiny, juicy beef and fat bites, perfectly grilled for a flavour-packed street food experience.

Ingredients

  • * 3/4 kg beef steak (rump steak/topside/rib eye)

  • * 1/4 kg beef fat (nundu)

  • * Salt to taste

  • * 1 tbsp meat tenderizer

  • * 1 tbsp oil

  • * 1/2 tbsp black pepper powder

Directions

  • Start by draining the meat to preserve its natural juices, then cut it into 1cm cubes.
  • Marinate the meat with a tantalizing blend of salt, tenderizer, oil, and a pinch of black pepper for 4-6 hours to infuse flavor and tenderness.
  • Cover the marinated meat with cling film to let the flavors meld.
  • Thread the beef fat and beef steaks onto skewers.
  • Ignite charcoal and grill the beef skewers over a low flame, turning them every few minutes until they reach the perfect level of doneness. Sprinkle water to control the flames.
  • In just a few minutes, your Sururu will be ready to serve.
