Ingredients
* 2 cups dried chickpeas, soaked for at least 15 hours
* 1 cup fresh coriander leaves

* 2-3 hot green chillies, seeded
* 1 cup fresh parsley leaves
* 4-5 garlic cloves
* 1 spring onion, chopped
* 2 tablespoons coriander seeds
* 2 tablespoons sesame seeds
* 1 teaspoon cumin seeds
* 1 teaspoon baking powder
* 2 tablespoons homemade falafel spice mix (see below for spice mix ingredients)
* 1 teaspoon salt
* 1/4 cup cold water

- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Shape the falafel mixture into small patties and place them on the prepared baking sheet.
