Crispy and flavorful Kuwaiti Style Falafel – golden chickpea patties seasoned with aromatic spices, perfect as a snack, appetizer, or sandwich filling.

Ingredients

  • * 2 cups dried chickpeas, soaked for at least 15 hours

  • * 1 cup fresh coriander leaves

  • * 2-3 red chillies, seeded

  • * 2-3 hot green chillies, seeded

  • * 1 cup fresh parsley leaves

  • * 4-5 garlic cloves

  • * 1 spring onion, chopped

  • * 2 tablespoons coriander seeds

  • * 2 tablespoons sesame seeds

  • * 1 teaspoon cumin seeds

  • * 1 teaspoon baking powder

  • * 2 tablespoons homemade falafel spice mix (see below for spice mix ingredients)

  • * 1 teaspoon salt

  • * 1/4 cup cold water

Directions

  • Drain and rinse the soaked chickpeas thoroughly. Pat them dry with a paper towel.
  • In a food processor, blend chickpeas, fresh coriander, red and green chillies, parsley, garlic, and spring onion until finely chopped but not pureed.
  • Toast coriander seeds, sesame seeds, and cumin seeds in a dry skillet until fragrant. Grind them into a fine powder.
  • Add the ground spice mix, baking powder, and salt to the chickpea mixture. Pulse a few more times to incorporate.
  • Transfer the mixture to a bowl, add cold water, and mix until it holds together when squeezed. Adjust water as needed.
  • Cover and refrigerate for at least 1 hour.
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Shape the falafel mixture into small patties and place them on the prepared baking sheet.
  • Bake for 20-25 minutes until golden and crispy.
